Tempeh Broccoli Stir Fry (gluten-free + vegan)

When the weather drops below freezing my tastes and food cravings tend to shift to more seasonal food like root and cruciferous veggies. The colder months require warmth from wherever our bodies can find them and I choose to incorporate heat from heartier foods like broccoli, sweet potatoes and ginger. Lately I’ve been heavily craving Chinese food but not all the chemicals and heavy sauces that are so often served in restaurants so I sought out to make my own. I prefer simple recipes that don’t require a lot of fuss that I can throw together after a long day and not make a monsterous mess in my kitchen in the process. No Time Chicken Tacos with Pico de Gallo

There is no question that my favorite food is anything and everything Mexican related. Having grown up in New Mexico it simply goes with the territory and in my house the spicier the better! So often restaurant style Mexican food is heavily leaden with fattening and less than stellar ingredients which does nothing for our health nor our glowing complexion. I love making this style of food with fresh whole ingredients loaded with nutrients. Now being the occasional meat eater I know how important it is to eat antibiotic and hormone free chicken. Since eating meat is not for everyone there are ways to re-work this meal to better suit a vegetarian or vegan lifestyle so I certainly encourage creativity with this recipe. When I’ve had an incredibly long day at work and don’t have the energy to make an elaborate dinner this is my go to.
